Work with a builder as an hommes de toutes mains?

My husband is thinking of registering under the auto-entrepreneur but is unsure as to what would be best. He would be able to have work with a registered builder if he himself was registered. He does not have a trade but has helped out in the past. Would he be best as a hommes toutes main petit jardinage or something more specific?
He is trying to avoid the expense of having to get business insurance and was hoping he could just get third party cover, would this be possible. One last thing I have also read you can delay registration for up to three months after starting is this correct and how would this be set up.
