Which regime for renting house out and organised activities?

I’m hoping to rent out my house offering catered accommodation and organised activities in the region. Would auto entrepreneur be the best option? I don’t anticipate high earnings for the first couple of years at least. I’d like to do research into rules and regulations about such a business but don’t know where to start looking. Which Metiers should be used?
All the points you mention on your homepage about helping with choosing the correct legal and financial structures, taxes, charges etc etc, I would love to know more information about all of this. Got a million questions really, but a source for reading material is probably the best start point.
