Which category to register as a labourer?

Our son has moved to France and has spent the last few months working for us on our 2 properties, mainly consisting of grass cutting, gardening, all caretaking and letting duties and building small walls. He is now wanting to register for this work, and also as labourer / plasterers assistant to cover the winter period. We would like to know what is the best way to do this.
