Which business structure for a gite, small caravan park and camping site?

My wife and I are both qualified teachers. I am also a battlefield guide. We have bought a farm in Normandy and want to do a variety of things towards our income. Firstly, we are applying for planning permission for a gite, 6 caravans and small camping site as well as some eco camping. We plan to use the farm for small scale farming activities. We will also supplement that income with my battlefield guiding and my perhaps wife teaching english if there is demand for it. Is that enough information for you to be able to advise which business structure we should establish?
