When does my health coverage become valid?

We have eventually managed to wade through the paperwork and now have our EURL started and registered and have a KBIS an siret. We have not, up to now been covered by the French social system as, although we are British citizens, we were working in the US for US company. Currently I have private (US) health insurance. When does my French social health coverage start? I have the company in my name with my husband as conjoint collaborateur. But right now we have no social security numbers - how do I get them? Can I cancel my US based health insurance and pick up a French mutual instead?
