What’s the best way to consult for a UK company?

My husband, myself and two school aged children live in France. My husband used to commute to the UK but this will cease in January. From January he has been asked to consult to a UK company. This would mean three days per month in the UK and approximately one day per month working from home. Should he start a business in France and invoice the UK company or should he be self employed in the UK and pay taxes there?

I will also be working from home in France doing online typing work for an Australian company. What business do I set up for this to pay tax? I will be a contractor and will invoice the Australian company for work done. Our combined income will be under 32,000 euros per year.
