What’s a more tax efficient way for a yoga teacher to operate?

I am registered as an auto-entrepreneur business, I am a yoga teacher and run a small studio here in France. I pay tax on everything at source, however I also end up paying tax again on the studio that I rent here. Could you suggest a more tax efficient way for me to operate please?

Also I have another yoga teacher coming to cover me for maternity leave this summer, she will receive payment from the studio too, is it best to set up an Association for this? She is also registered as an auto-entrepreneur and has other contracts. If I set up an Association would I be able to receive payment myself from it?
