What is the best billing model for food deliveries in France?

I am registered as an auto-entrepreneur in France and would like to offer my services for food delivery to restaurants in my neighbourhood. I have an HACCP certificate and also have read up on the rules for transportation of food material. There are 2 elements here, I am not only doing the deliveries, but am developing the market for these restaurants by carrying out marketing activities and eventually will be setting up a website to sell the meals. So to say - a smaller local version of allo-resto. I only have my private vehicle (car) at the moment to do the deliveries in, I will buy the requisite Caisson isothermique to transport the food in.

As I am offering my business services to both the suppliers of the meals as well as to the consumers of the meals. What is best billing model to be followed i.e. the supplier fixes the price of the meal and I collect a percentage from them, or do I set the price and reimburse a percentage to the suppliers. What are the legalities around re-selling meals? What will my taxable revenue be, the percentage that I keep or the total price of the meals sold?
