What is my best option for setting up a consultancy business in France?

I am British. I already own a property in France and plan to settle there in April 2014. I have an annual pension of 8,600 euros and have an initial contract giving me 4 months of work per year worth 50,000 euros with the possibility of additional contracts. I plan to set up an office within my property. What is my best option for setting up a business?
