What form of business registration is suitable for online selling?

I want to create online educational courses and sell them on sites like Udemy, Skillshare and my own website. This will be my primary business activity in France. Secondary activity will be to build video games and sell them on Steam/Google Play/IOS App Store/Amazon App Store. My wife has a French work permit and I came to France through a process called regroupement familial. We have stayed in France for less than five years. We both have Carte de Sejour temporaire which allow us to work. Our cards are renewed each year.

My Requirements:

use a trading name instead of my own name for my courses and video games
use a domiciliation address for office registration (virtual office like a mailbox to save on costs)
as the business grows, I may have to hire freelance designers and programmers to help me
