We want to set up a homemade pie business

Myself and my partner wish to start a homemade gourmet pie business in France. Pork pies, steak and ale, goats cheese etc. Our aim is to sell to bars, restaurants cafes etc, and also maybe sell on market stalls. Our end goal is to eventually open a restaurant, but that is far into the future. The chef has no formal qualifications, but does have restaurant experience. We have read about requiring a CAP qualification as an artisan, but i am a little confused as to whether we would have to register as artisan, as we are using pastries. I read some other posts from people who are selling american pastries and cakes and valerie said they do not need the qualification. We also wish to work from home.
