Transition period from UK employment to business in France?

We are looking to purchase and run a chambre d’hotes business in France, but we need to continue working in the UK while bookings were taken and website and marketing built up etc. Probably four to five months prior to actually moving over to operate for the season.
- How is this transition period best dealt with?
- We would need to take deposits, so would have money going into an account relating to the business, prior to actual start up?
- When would it need to be registered… or would we register a uk company for the pre opening period to be re reg in France?
