The right way to take legal action to recover money owing?

You may recall that I have asked you for advice about this particular client before, and you gave me links to research about taking legal action. The client concerned has failed to answer my previous letters, so still owes me money for work carried out. I cannot find in your links if there is a set period of notice I should give to the client before I start legal proceedings, and wonder if you could advise me. I would like to be able to say that I want payment within seven days of my letter because I am so fed up with waiting, but am worried that this may not be legal.
