How do I setup up a gite properly in France?

We have a holiday home in France which we are wanting to start renting as a gite. We are unsure of exactly what we need to do in order to set this up, i.e. who we register it with, what sort of insurances to take out etc. Do we need to inform the Mairie or just the Hotel des Impots?
