Serving alcohol with meals at a table d’hotes

You have helped me and my husband start up a chambre d’hotes and table d’hotes in France and would like to be able to serve alcohol with the meal please could you let me know what I need to do in order to set that up? Also do I need any kind of hygiene certificate to cook meals for the table d’hote?
