Serving alcohol to guests - chambre d hotes

How can we serve alcohol to our guests?

Can this be an honesty bar? or added to their final bill if Chambre d’hote?
I understood you can serve alcohol with an evening meal, table d’hote, can the evening meal be tapas? and can the alcohol be higher value than the food?
How difficult is it to get a license to serve alcohol?
I think we are currently registering as a Chambre d’hote, how easy is it to upgrade later to a table d’hote and how long does the process take
