Salon de the / pastry shop / chocolatier / atelier auto-entrepreneur?

My husband ( French with CAP patissier ) is thinking of opening a small salon de the / pastry shop / chocolatier with baking workshop and have me ( his wife) work with him and maybe employ one other person, would he be allowed to register this business under the auto-entrepreneur scheme? Are we allowed to employ others under this scheme? What should he declare me as in order to avoid huge social charges?
