Registering a gite business as a couple in France

If a married couple are running a gite business together on a day to day basis, ie, cleaning the gites, pool, maintaining the grounds, washing the linen etc… Can only one of them be registered as an auto-entrepreneur?
Would there be any benefits to them both registering as auto-entrepreneurs with different roles, ie one registered as running the gites and the other the Chambre d’hôte and English courses?
