Mobile catering as an auto-entrepreneur?

I have been living and working in France for nearly five years now and I feel it is time to change working for a company and give an idea that has been bubbling away for some time a shot. I currently work on an industrial zone and want to provide a mobile coffee/sandwich van for the workers and tourists. Also offering an office delivery service. The plan would be to prepare the sandwiches fresh each morning at home. I anticipate a turnover around 60,000 euros per year.

I would like to hear your advice on which form of business I should set in France. As the business is mobile and I would need a scooter for delivery I would like to be able to offset these costs. Would you be able to shed some light on the relevant food hygiene and regulations I must conform with, especially as the food will be prepared at home and sold from the van. I was advised the best option is to base the van on private land as I would not need to apply to the local marie for a license to sell food on public space, is this true?
