Micro-entrepreneur or regime reel to start a fishing business in France?

I would like to open a carp fishing business in France having purchased a property with a small lake in France. I would like to know if setting up as a micro-entrepreneur or entreprise Individuelle regime reel simplifie is the best option.

I am currently working in Saudi and as yet not moved to France on a permanent basis but I would still like to open this year if possible. Can you advise on the best way to proceed and what would be the best options for me.
