Market stall and food/catering business?

I want to start my own business working in the local markets and (sorry) but I have lots of questions. I will be selling home-cooked food from a market stall - nothing too complicated, just English and American cakes, bakes and biscuits etc. I have read that I need a CAP in order to do this which could be 2 or 3 years at college in France. This does seem rather like using a sledge-hammer to crack a nut!

I have no qualifications in catering although I have done some in the UK. Do I need any qualifications? Would I have to have my kitchen up to a certain standard? If I got a UK Food-hygiene certificate would this help? Is becoming an auto-entrepreneur the best way to start my business?
