Low turnover, various but related, activities - structure?

We are at the moment setting up an aquaponic system which will add to our ability to raise produce for our own family. Currently we already grow and raise a large proportion of our food requirements. Our small property is run under permacultural principles, is in rural Mayenne (53) and covers 10.000m2. The aquaponic system, which will be operating later this year, will mean that we have a surplus of produce. We want to carry out several activities centred around the system, as follows. Sell surplus produce. Offer teaching / training courses for those wishing to set up their own aquaponic systems. Sell seeds, plants and equipment online.

There are three of us involved in this - my husband and I and another adult family member.  We do not need this enterprise to generate large sums of money - we anticipate that annual turnover may be around 10,000 euros per year. We already have a small income from rental property in the UK and my husband teaches music online. We have read that it is possible to register with the MSA if you have less than 2.5 hectares of land under a regime a titre indicatif but this wouldn’t cover activities such as teaching aquaponic practices or selling the equipment.
