Legalitys for airbnb in France

As I’ve mentioned in my past question I am in the process of buying a hotel/restaurant in the Pyrenees Orientales region of the south of France. I am needing to wait till after the sale to begin my visa application. I was wondering about the legalities of operating to a very reduced degree through Airbnb and such while I await the visa approval.
Is this a legal option? if so is there any information I need to know, law, or tax-wise about this possibility?
