Large bed and breakfast regulations

My husband and I have bought a 17 bedroom bed and breakfast. Previously is has been run as seasonal accommodation for workers and we are changing it to short stay bed and breakfast for tourists. We have the registre de securite but we are struggling to find information on what regulations and annual checks we need to adhere to or whether we need to change what the building is classified as. Are you able to recommend a good website to find this information or have personal experience of what is needed.
As we understand it there is a large inspection with the local gendarmes and pompiers every 5 years which falls in 2021 and we want to be ready and all in order for this. Thanks in advance for any help or advice.
