Kitchen regulations for cooking business based at home?

I am thinking of setting up a business, which will involve baking at home, so no meat will be used in the kitchen. I really need help in finding out where I start, do I need to contact someone in France who will advise on the kind of kitchen required, then do I have to go on a course on hygiene and at what point do I have to register as an auto-entrepreneur.
