Is the auto-entrepreneur conjoint collaborateur scheme right for us?

I’m looking to set up a chambre d’hotes business in France with a number of smaller activities involved such as market tours etc. My wife and I would work together so it seems like the auto-entrepreneur conjoint collaborateur scheme is right for us.

When it comes to social charges etc. could you explain a little about the 3,000 euro extra for registering my wife in the French business?
As my social charges, as I understand, are based solely on business turnover, is the 3,000 euro charge for my wife a fixed amount / minimum amount that rises on our joint turnover etc?
