Independent Contractor Business Structure / Tax and Social Charges

I am looking for information regarding the best structure, tax and social charge planning for the following circumstance.  A California licensed attorney doing work for California law firms on an independent contractor (1099) basis.  Doing consulting, research and writing type work.  Estimated income from the California firms could be up to €15,000/month.  Not licensed as a lawyer in France or planning on doing any work for French firms.  If one does this work from France, what is the best structure?  Is there a standard deduction for business expenses (10%)?  With a spouse and 3 children, what would be a reasonable estimate of the taxes/social charges to expect?  Also, is there an annual cap on social charges (approximately €40,000)?  Thank you in advance for your insight.
