How long does it take to start a business in France?

I am buying a buying fond de commerce (hair salon). I made contact with a notaire who is handling the bail. He is referring me to an avocat specialised in the creation and registration of new businesses as he believes I need to set up a new business for the mechanism / operation and financial relationship between me and the coiffeuse who is going manage the hair salon. If a business has to be set up, how long does this take and are there taxes to be paid? Can you help in setting up and registering a new company?
