How do I set up to provide holidays to groups in France?

I retired last year and live off my private pension. My state pension is not due for another three years. I have been developing a property in France and wish to use part of it to accommodate groups up to eight or ten for holiday accommodation targeting cycling, walking, yoga retreat - essentially clean living eco-friendly pursuits.

I only intend this for the 16 weeks of summer, essentially to cover running costs and a small supplemental income. I do expect to provide breakfast and maybe evening meal. I will need to convert (internally) a portion of my property to additional accommodation for the purpose. I am domiciled in UK and pay may taxes there. Where do I start?
