How do I request change of business use in France?

I want to know about how to apply to change a business use here in France. I want to set up a yoga studio. I found a business for sale (a mechanic) which is selling its business (commerce du fonds) plus murs.

The premises itself has good potential for a future yoga studio after some building work so obviously I do not want to continue with the mechanic business. What is required for me to request a change of business use and what likely regulations would require approval?
