How do I register a gite business in France?

I intend to open a gite, tables d’hôtes and chambres d’hôtes business in France - giving guests the option of self-catering or opting for breakfast and dinner. I project a turnover of between 15,000 euros and 20,000 euros a year. After research I see that one should seek permission from the local Marie before opening and advertising. What is the best course of action?
