How do I employ staff for chambres d’hôtes?

I have just set up as an auto-entrepreneur to run our 5 bedroom chalet in the French alps. We are both english and have lived in France for nearly 10 years.

My fiancée is currently au chômage following a rupture conventionelle from her CDI contract. Can I employ her to help me over the summer for cleaning and changeovers at the chalet?
How do I go about this? I understand there will be social charges to pay etc.
What are the turnover limits for chambres d’hôtes activity offering no other services other than the room and breakfast?
Should I wish to add tables d’hôtes evening meals to the activity what do I need to declare?
