How do I employ staff for chambres d’hôtes?

I have just set up as an auto-entrepreneur to run our 5 bedroom chalet in the French alps. We are both english and have lived in France for nearly 10 years.

  1. My fiancée is currently au chômage following a rupture conventionelle from her CDI contract. Can I employ her to help me over the summer for cleaning and changeovers at the chalet?
  2. How do I go about this? I understand there will be social charges to pay etc.
  3. What are the turnover limits for chambres d’hôtes activity offering no other services other than the room and breakfast?
  4. Should I wish to add tables d’hôtes evening meals to the activity what do I need to declare?
