How do I change my business to a regulated trade in France?

I am going to visit the Chambre de Metiers this week as emailing, writing and online communications has not changed my primary business in France activity from Herberge Touristique to Mensuisier. After much research I need to prove my plus three years experience as I am a qualified electrical/mechanical engineer but not a qualified joiner, but I have worked as a joiner and carpenter for 13 years and ran my own hands on joinery business in UK for seven years.
- Will my SIRET number remain the same?
- Will my APE code change?
- Will my curriculum vitae, tax returns, VAT returns be enough to prove my experience?
- Shall I take photos?
- Please could you advise what will be expected?
