How can I open an auto-entrepreneur business from America?

I’m launching a Paris experience company that will offer classes, workshops, excursions and events for visitors to Paris. I’m currently based in the U.S. (a U.S. citizen) and have been told by a potential workshop leader that she can’t invoice an American-based business meaning I can’t pay her for her services. Is this true?

Still, I’m planning to move to Paris in the fall, and would like to be able to declare this business as my source of income for the visa application. Is an auto-entrepreneur the way to go? Can I do this from the U.S.? Do I need a bank account and address in Paris? What do I need to do?
