Health and hygiene standards?

I’m starting a small catering business. I have registered the business and obtained insurance. However I’m told I will need a separate kitchen and, although the work is scheduled, I intend to trade before a new kitchen is finished. I am meticulous about maintaining high standards of hygiene, but my set up does not fit in with the letter of the law.

I presume I will sometime receive an official visit for an inspector. Does anyone know how long this might take? And the consequences when the inspector I am trading without meeting the requirements?
