Gite and chambres d’hotes as separate auto-entrepreneur businesses?

Following on from my previous question about conjoint collaborateur - thank you for clarifying the picture for me, as I can see we will not be able to go down the route of both working in the same business. However, we have a gite as well as the chambres d’hotes - can we separate this out so that my wife runs the chambres d’hotes and I run the gite? Each register separately as auto-entrepreneurs?
