General carpentry and labourer activity code?

I’m wondering if you can give any advice as to how to describe the activities I hope to undertake under the auspices of a business in France. Basically I’m an experienced skilled labourer, with a city and guilds qualification in general carpentry. The work I have been doing for the last 5 years has covered many aspects of the building trade, from general labouring, concrete work, first and second fix carpentry, blocklaying and demolition, to tiling, painting, finishing carpentry, including the application of varnish, waxes etc, gardening and lanscaping (paving,fencing etc.).

I have been working as an independent self-employed trader during this time, registered under the CIS scheme in the UK. I would describe myself as a Renovator of property and outdoor space. It seems that in France there is a requirement to be very specific as to the trade which will be carried out; will my wide range of experience actually count against me when it comes to proving relevant experience in a trade? Is it likely that I’ll have to discard many of the skills which I’ve acquired, in order to register a company? How does one go about proving relevant experience for the purpose of initiating a company?  Is it possible to register for a variety of metiers, and would I have to do some qualifying courses in France to prove competence?
