Changing from auto-entrepreneur to SARL for a property management company?

We run a property management company and one of our services we want to offer is bookings of our houses and apartments. I know that i have to declare everything that comes in, so for example if I take a booking in an apartment for 900 euro for a week, I pay the owner 80 percent but I have to declare it all, not just my 20 percent. So my question is should I change from auto-entrepreneur, so that I can have money coming in and I’m only declaring on my fee, not the entire payment? How do I go about it and what charges would I have to pay up front?
