Changing activity and opening a shop as an auto-entrepreneur?

After much deliberation, I have decided to stop trading under my current activity (camping, 5530z) and would like to open a shop selling angling products. My first question is, can I simply change the activity of my business online? Or will I need to close it down and start a new business? My second question is, what kind of bookkeeping is involved in running a shop under auto-entrepreneur? Is it simply a case of keeping receipts of expenditure and a ‘daybook’ of what is sold and what payment method was used?
