Catering to gite guests in the evening?

We would like to offer gourmet (serving food that is very high quality) short breaks from our gites outside of high season. We have local producers we can collaborate with, but we would like to know if we can serve an evening meal as part of the stay? We would particularly like to know if we would need a permis d’exploitation and if so would the chambre d’hote one be sufficient.
