Can I be involved in more than one business in France?

My husband and I hope to start up a chambre d’hotes business, a pet/house sitting service and soon need to start an association to run an animal shelter as a charity in France.
- If our Marie allows all of these businesses are we better to take one business each rather than as a couple?
- Can we also start an association as a charity for the shelter?
