Business setup with partner

I would like to setup a new entreprise with a business partner. It will be a services based business with low overheads. We do our own work individually but also overlap a great deal. We’re researching the best way to get started and would like your advice. One choice is that we setup two ME’s with a GIE. If the turnover goes over the limit, we could then look at a SARL, SAS etc. Your advice would be most appreciated.
