Best way to structure a ski chalet business?

I have secured a chalet for the upcoming winter season. Expected turn over circa 30,000 euros and 40,000 euros per year (will not show a profit for the first 3 seasons). The chalet has 4 rooms and 8 beds. We will provide breakfast and dinner and will provide wine on the table with dinner. My wife and I plan to work in the chalet and do not plan to employ any staff. We has rented the Chalet for 5 months from the owner who is British. I have set up a business in the UK (most of the customers are from the uk). Its a limited company.

  1. How should I structure the business in France? (keeping in mind I have set up a UK business)
  2. Being a catered chalet can I register the business as a Chambre D’Hotes and if not, then what?
  3. Would we need an alcohol licence, and if so how do we get it?
  4. To get the alcohol licence would we need to have a registered business or can you go as an individual?
  5. Can I set up the business before or without securing a chalet lease?

I have engaged with another party on setting up a business and they say they can’t set up the business for me without a signed commercial leased. I have a signed rental agreement from the owners agent which I’m told is not a commercial lease.
