Best way to setup marketing and cycling holiday businesses?

My husband and I have just moved permanently to France and we hope that you will be able to help us. I have been self-employed in the UK for the last year, but working solely for a company in New Zealand. They are a small business manufacturing and selling a product worldwide and I help them with sales and marketing activities - finding new customers, dealing with queries, providing pricing and product information and working with distributors to promote and market the products, etc. My income is €32,000. I’m considering whether I can work as an auto-entrepreneur. I’ve seen your video regarding working for only one company, but there is absolutely no way that my client would set up a business in France to employ me, so I have to find another way.

My husband is retired and receiving a pension of around €7,500 per year, but would like to set up a small business offering fully-inclusive cycling holidays in France. This would involve him paying for food and accommodation, etc., and supporting groups of cyclists as they ride in the Pyrenees. Expenses would be around 75% of turnover, perhaps a little more. Tours could only be run for three or four months of the year. Can you tell us the best way to proceed?
