Best way to setup a gite and pottery business to minimise social charges?

In the UK I was a self employed potter and I intend to start a pottery with a small turnover here in France and run it in conjunction with a gite that will start trading early next year. I have looked at doing this as an auto-entrepreneur, which seems like a good way to start but I have some questions to ask regarding that route as I feel it might not be a good idea long term for the business:

  1. The social charges for a gite appear to be around 14% of turnover (not profit) and the charges for a potter about 24% of turnover (not profit). So if I were able to put them into one auto-entrepreneur I would opt for the gite business and then sell pots to customers. I am not sure if this is allowed?
  2. Is there an alternative auto-entrepreneur to artisan that I can use with smaller contributions taken from turnover. For example, an auto-entrepreneur that trades as selling pots rather than makes and sells them? I may want to sell other things.
  3. An additional consideration is my wife is employed and I am currently under her carte vital how will the new enterprise effect that situation?
