Best way to register a website business and a gite business?

I have 2 web sites that I run in the UK which I hope to soon continue operating in France together with a gite once we move there. I run the websites and I expect my wife will do most of the work in the gite. I assume that it is best to register the website business as an auto-entrepreneur under my name and the gite as a micro enterprise - should this be in my wife’s name? Do we have to register as French residents before registering the businesses?
