Avoiding Tax on Non-Income - Viator etc

My tour business will require my using a VTC contractor to ferry me and my guests to the various chateaux we will visit. If guests book through my website, my understanding is that this won’t be a problem since I can use Stripe Connect to split the fee in the appropriate way between myself and the VTC. However, for guests booking on Viator, TripAdvisor, AirBnB, Google Experiences etc. I don’t see a way to avoid paying taxes on money that never really goes to me. Any ideas? Or is this question too specialized in nature?

If you don’t have an answer yourself, can you recommend a French accountant who might be a good resource?
