Need advice on changing residency status in France

I’ve just finished my master Studies in France, but in next September I will need to renew my residency Permit and willing to change my recusancy status but I don’t know what it is suppose to be ?
As I’m planning to open a Food business in France and be self-employed, in addition, I will need two staff to work with me when I start my business. What do you suggest to me ? Which status of residency would be suitable when I would register my business ?
