Can I have an assistant for one to three days every now and again and them bill the client direct?

As my wedding business in France is growing I am in need of help, but not on a full-time basis (one to three days every now and again). I have two scenarios:
- An assistant for one day a week to handle calls and e-mails. What would the best way to employ them be please?
- Up to three assistants for three days whenever I have to deliver a wedding, which can be up to 10 times in a year. For this, can I put the total amount for my services plus assistants on my initial contract, so that the client knows the full price, but when it comes to invoicing, invoice only for my fees and send the assistants invoices (they are auto-entrepreneurs also) along with mine?
