What licenses and permits do I need to setup a mobile catering van?

I was wondering if you know of anyone who has had experience with trying to do a food truck. Do you know what sort of hoops to jump through in regards to licenses, permits for parking one can park. In the States, food trucks are a everywhere and each city has different regulations, but in France, I believe it is fairly new. Any input would be great.
